Cheese Omelette
4 medium Eggs50 grams Mozzarella Cheese1 tsp Olive OilAny desired herbs or vegetables. 
Directions:In a bowl, mix eggs and half the mozzarella. Grease a pan with olive oil and pour in mix, top with the remainder of the cheese. 
Good ingredients to add if desired are peppers, mushrooms, zucchini and spices. 
This will make two servings (half each).

Choc-Oat Chip Cookies
1 cup Crisco (or butter)1¼ cup brown sugar (packed)½ cup granulated sugar2 large eggs (or 3 small)2 tablespoon milk2 teaspoon vanilla1¾ cup flour1 teaspoon baking soda¼ teaspoon salt (optional)2½ cups regular quaker oats1 cup chocolate chips1 cup chopped walnuts (or other of choice)½ cup raisins 
Directions:
Heat oven to 375 degrees. 
Beat Crisco and sugar until very creamy. Add eggs, milk, and vanilla; beat well. 
Add flour, baking soda and salt; mix well.
Fold in oats, chips and raisins; mix well.
Drop by cookie scoop onto prepared cookie sheet. (I use parchment paper for best results)
Bake 11 to 13 minutes.Cool 1 minute on cookie sheet; remove to rack and cool completely.
